A Taste of Northern Norway: Arctic Flavors & Northern Lights by Nevada Berg

October 11 - 17, 2026.
Bodø– Lofoten – Vesterålen – Tromsø.

Immerse yourself in a season of quiet magic – when the summer crowds have faded and the spirit of the North reveals itself. As darkness returns, the Northern Lights begin to dance once more across the sky. The weather turns dramatic and moody, with shifting skies and wild seas that bring an exhilarating energy. This culinary trip focuses on the rustic and wild coast above the Arctic. We will experience both fishing and farm life in Lofoten as well as the cultural bustle of the city of Tromsø. We will connect with local producers and chefs who are shaping the region’s food culture, and even try our hand at creating some products ourselves. This trip blends relaxation, hands-on experiences, and an authentic taste of the Arctic.

This journey blends food, culture, and nature into one immersive experience.

Tour highlights include:

  • Taste the Arctic with seasonal menus and local ingredients
  • Nevada Berg as host and storyteller throughout the journey
  • Two nights at historic Kvitnes Farm with workshops in sausage-making, fermentation, and foraging
  • 17-course dinner at Kvitnes
  • Explore art and coastal charm in Henningsvær
  • Food crawl in Tromsø
  • Chase the Northern Lights under the Arctic sky

Nevada Berg, creator of North Wild Kitchen and author of two internationally acclaimed cookbooks, brings a unique depth to the tour through her storytelling and passion for Norwegian food culture.

Hotels

Holmen, Lofoten
Holmen Lofoten is a remote collection of traditional, fisherman’s cabins on the shores of the Lofoten Islands. Recent renovations have transformed our cabins into cosy places to stay while preserving all of their original magic. We’ve also built some new rooms fusing traditional and modern methods and materials, to offer all the comforts you need in classic Scandinavian style. It’s a different kind of luxury, one that works in rhythm with nature and the landscape.

Kvitnes Gård, Vesterålen
With 15 unique rooms, Kvitnes Gård offers a down-to-earth and tranquil accommodation experience. The farmhouse dates back to 1855, so we can promise a homely atmosphere. Creaking floorboards, fire in the fireplace and low shoulders. Drink your morning coffee to the sight of chickens in the yard and let your senses awaken in time with the rest of the animals on the farm.

  • Day 1 & 2: October 11-12th 2026 - Welcome to Norway!

We will meet in Bodø briefly before taking the ferry to Moskenes, the southern part of Lofoten. Here, we will settle into our home for the next two days. Our stay will be at the edge of the water where fisherman once dwelled and made their livelihood. Known for coalfish, cod and halibut, seaweed, wild mushrooms and berries, grouse and lamb (to name a few), the chefs will create a menu for us based on the season and what the landscape dictates.

Our stay will include time to enjoy the contrasting and always shifting forces of nature – wild and rough, peaceful, quiet, and calm. Perhaps you’ll take a morning dip in the cold waters, a hike along the rocky shores, read by the light in the window, or converse with your fellow travellers with a drink by the fire. October 11-12th 2026 - Welcome to Norway!
  • Day 3 & 4: October 13-14th 2026 - Lofoten to Vesterålen

Leaving our lodgings behind, we will make our way to the northern part of Lofoten. Our first stop is Lofoten Seaweed, a pioneering company that harvests and produces sustainable seaweed products. Here, we will learn how they combine traditional knowledge with modern innovation to create flavors from the ocean—and taste some of their specialties. Next, we will enjoy lunch and a stroll in Henningsvær, one of Lofoten’s most picturesque fishing villages. Known for its colorful houses, art galleries, and dramatic setting on tiny islands connected by bridges, Henningsvær offers a perfect blend of culture and coastal charm.

From here, we continue to Kvitnes Gård, our home for the next two nights. This unique farmhouse from 1855, where you get to taste, see, feel, learn and experience what it really means when people say that it takes time to produce something good. A contrast to our fisherman cabins, we will stay in the unique and homey rooms of the farmhouse, complete with creaking floorboards, low shoulders and fire in the fireplace. Here, you can drink your morning coffee to the sight of chickens in the yard with the mountains and sea in the background. We will also have hands-on experience in making our own products and learning about the techniques they incorporate into their farm and restaurant. We will dine here for both nights, concluding with their famous 17-course dinner, where they show how the journey of the meal takes years of preparation from soil and seed to gentle harvesting and slaughtering.
