  • Day 1: 8th of May – Ålesund, the City of Art Nouveau

    Your journey begins in Ålesund, one of Norway’s most enchanting coastal cities—where sea meets sky, and history meets flavor. Nestled among islands and fjords, Ålesund is famed for its Art Nouveau architecture, dramatic landscapes, and vibrant food culture. 

    After arriving via Vigra Airport, you’ll settle into the elegant Hotel Brosundet, a historic waterfront property that blends modern comfort with timeless charm. Here, you’ll meet your fellow travelers— an intimate group perfect for forging new friendships and sharing unforgettable moments. 

    We’ll ease into the rhythm of the city with a food walk through Ålesund’s charming streets. Along the way, you’ll taste local delicacies, hear the stories behind the flavors, and get your first taste—literally and figuratively—of Norwegian coastal culture. 

    You’ll have time to explore on your own in the afternoon. Perhaps you’ll climb the 418 steps to the Aksla Viewpoint, where the city unfolds beneath you like a painting, or visit the Jugendstilsenteret to uncover the fascinating tale of how a devastating fire gave rise to Ålesund’s iconic architectural style. For a deeper dive into the region’s past, the open-air Sunnmøre Museum offers a captivating glimpse into traditional Norwegian life. 

    As the sun dips toward the horizon, we’ll gather once more for a warm and welcoming dinner at Apotekergata No. 5—a celebrated restaurant known for its seasonal dishes and cozy atmosphere. It’s the perfect way to toast to the beginning of our journey.

    8th of May – Ålesund, the City of Art Nouveau
  • Day 2: 9th of May – Seabound: Journey to Ona

    Wake to the soft glow of morning light filtering through your window. Today, we leave the mainland behind and venture westward into the Nordic Sea, bound for the tiny island of Ona. 

    Our journey begins aboard a private bus that winds through a network of underwater tunnels and bridges, linking scattered islands like pearls on a string. At Finnøy, the road ends—and the sea begins. We’ll board a ferry and glide across the water to Ona, a place that feels like the edge of the world. 

    This day holds special meaning for Nevada, who will be guiding us to the island where her husband’s family once lived. His father left Ona as a child, but the island never left him. Nevada writes: 

    “For years he wanted to take me to Ona – to the place where he spent several childhood summers racing between the quaint houses, collecting seashells, fishing, and playing into the night as the summer sun kept its brilliance. This place of charm and memories, with its stormy and sunny composition keeps you guessing. Rain or shine, cold or warm, this is a place suited for those who long for the sea and are braced for its sometimes-unforgiving disposition.” 

    Our home for the next two nights is Ona Havstuer, a coastal retreat nestled among the rocks and waves. After settling in, we’ll explore the island with a local guide. Ona has been a fishing village for centuries, and its history is etched into every weathered boathouse and salt-stained dock. We’ll visit the iconic red lighthouse, standing watch since 1867, and learn how this tiny island once bustled with over 300 residents during the post-war fishing boom. Today, only about 18 people live here year-round—but the spirit of the sea remains strong. 

    After our walk, lunch will be served at the hotel, followed by time to simply be—wander among the colorful wooden houses, listen to the hush of the waves, and breathe in the briny air. As evening falls, we’ll gather again for dinner at Ona Havstuer.     9th of May – Seabound: Journey to Ona
  • Day 3: 10th of May – Fishing at Ona: A Taste of Island Life

    Today, we step into the rhythm of island living—where the sea provides, and every catch tells a story. 

    Though fishing once sustained the island’s economy, it’s now more a way of life—a tradition kept alive by locals who still head out to sea for fresh meals and quiet moments. This morning, we join them. A seasoned fisherman will take us out by boat to his trusted spots, where traps were set the day before. With anticipation, we’ll haul them up and see what the ocean has offered—crabs, shrimp, perhaps even crayfish. 

    As we make our slow return to port, the boat will weave through the surrounding islets and archipelago. Keep your eyes peeled for seabirds and marine wildlife, and let the salt air and gentle waves lull you into the island’s timeless pace. 

    Back at Ona Havstuer, lunch awaits—crafted from local ingredients and served with the warmth of coastal hospitality. 

    This evening, we’ll feast on our own catch. If fortune favors us, it will be a meal to remember—just as Nevada recalls from her first visit: 

    “The crabs were lifted ashore. Almost immediately, the gas burner stove was lit and a large pot with water and sea salt was brought to boiling. One by one, the crabs were tossed in the water and simmered until just perfect… Fresh, sweet, and buttery. There’s nothing quite like eating something this local and so fresh that it doesn’t need anything else served with it.”

    10th of May – Fishing at Ona: A Taste of Island Life
  • Day 4: 11th of May – Where Old and New Traditions Meet

    This morning, we bid farewell to Ona and begin our journey to the island of Gossen. As we board the ferry, be sure to partake in a beloved West Coast tradition: a hot cup of coffee paired with a “svele”—a thick, pancake-like treat topped with sweet buttercream or the iconic Norwegian brown cheese. It’s a simple pleasure, and one that locals swear by. 

    Once ashore, our bus awaits to take us to Havsnø Sea Salt, where we’ll meet Michal—a spirited entrepreneur originally from Portland, Oregon. Michal’s journey began with a love for salt back in the Pacific Northwest, but it was the move to her husband’s home island that sparked a question: why wasn’t anyone harvesting salt from the pristine waters right outside their door? So, she did. 

    Founded in 2014, Havsnø has since earned accolades across Norway and beyond. Their sea salt graces the tables of top restaurants and gourmet shops across Europe and the U.S. During our visit, we’ll tour the facility, learn about the process, taste the products, and have the chance to bring a bit of Norway home with us. 

    We continue our journey on the island of Gossen and visit our next local producer. From salt to herring, we continue our journey to Juvik Sild—a family-run and award-winning company that honors Norway’s deep fishing heritage while embracing innovation. The Sporsheim family has been part of this tradition since 1928, and today, they’re breathing new life into the art of herring. Nevada writes: 

    “Using their father’s herring recipe, and a few new ones of their own, they have set off to capture the taste buds and imagination of Norwegians and the rest of world.” 

    We’ll hear their stories, and sit down to a “sildebord”—a herring meal that blends old flavors with new ideas. Expect bold tastes, surprising combinations, and a deeper appreciation for this humble fish. You can read about Nevada’s visit to Juvik Sild here

    After a full and flavorful afternoon, we board our bus once more and begin the journey to our next hotel. We’ll take another ferry, pass through the city of Molde, and eventually reach a stretch of coastline where the archipelago gives way to open sea. Here, nestled between land and water, is our beautifully situated hotel. 

    Take time to breathe in the fresh air, stretch your legs, and settle into your room. Whether you choose a quiet walk or a moment of rest, let the landscape speak to you. In the evening, we gather again for dinner. With new stories to share and flavors still lingering, it promises to be a night of laughter, curiosity, and connection.

    11th of May  – Where Old and New Traditions Meet
  • Day 5: 12th of May – From the coast to Trondheim

    Wake to the sound of waves gently brushing the shore—nature’s own lullaby, just steps from your room. After breakfast, we check out and begin our northbound journey toward Trondheim, with a day full of scenic wonder and cultural depth. 

    Our first stretch takes us along the famed Atlantic Road, a marvel of both nature and engineering. This 8.3-kilometer route dances across the sea, connecting the islands of Averøy to the mainland via eight dramatic bridges. As we drive, the road curves and dips with the rhythm of the ocean, offering breathtaking views of the archipelago and the untamed Norse Sea. It’s one of Norway’s most iconic drives—and one you won’t soon forget. 

    After crossing the spectacular Atlantic Road, we take a delightful detour into the world of artisanal cheese at Tingvollost. Nestled in the lush countryside, this family-run creamery has earned global acclaim for its handcrafted cheeses—most notably Kraftkar, a blue cheese that was crowned World Champion Cheese in 2016. During our visit, we’ll meet the passionate makers behind the magic, learn about their sustainable production methods, and enjoy a tasting session that’s as rich in flavor as it is in tradition. It’s a sensory experience that blends Norwegian nature, craftsmanship, and culinary excellence in every bite. 

    By afternoon, we arrive in Trondheim—Norway’s historic capital of the north and the final stop on our journey. We’ll check in at our hotel. After settling in, we’ll gather in the reception and stroll together to To Rom og Kjøkken, one of Trondheim’s celebrated restaurants. 

    Tonight’s dinner is a chance to reflect, connect, and savor. With Trondheim’s charm as our backdrop, we’ll share stories, laughter, and the quiet joy of a journey well-traveled.

    12th of May – From the coast to Trondheim
  • Day 6: 13th of May – Trondheim: A city of tastes

    Our final day together unfolds in Trondheim—a city where Viking roots meet modern culinary brilliance. Once the capital of Norway’s early kings, Trondheim has grown into a vibrant hub for food lovers, where farm-to-table isn’t just a philosophy—it’s a way of life. Local produce, seasonal ingredients, and a deep reverence for tradition shape the menus of its many acclaimed cafés and restaurants. 

    You’ll have the morning free to explore at your own pace. Perhaps you’ll step inside Nidarosdomen, the largest medieval cathedral in Northern Europe, built atop the Viking grave of St. Olav. Or maybe you’ll stroll along the river, browse the boutiques, or simply soak in the city’s quiet charm. 

    By midday, we’ll regroup in the picturesque neighborhood of Bakklandet. With its cobbled streets, brightly painted wooden houses, and cozy cafés, this area is a delight for both the eyes and the appetite. We’ll enjoy lunch together at Sellanraa’s—a beloved local spot known for its fresh ingredients and thoughtful dishes. 

    As the sun begins to dip, we’ll gather one last time for a farewell dinner at one of Trondheim’s standout restaurants. The menu changes with the seasons, always showcasing the best of what the region has to offer. It’s a fitting finale to our journey—celebrating the flavors, friendships, and stories we’ve shared along the way.

    13th of May – Trondheim: A city of tastes
  • Day 7: 14th of May – Departure and journey beyond

    This morning, we gather one last time over breakfast, sharing stories, smiles, and heartfelt goodbyes. Our journey together may be ending, but the road ahead is yours to shape. 

    From Trondheim, the possibilities stretch wide. For those drawn to the sea, we recommend boarding the Hurtigruten or Havila ferries—legendary coastal voyages that carry you northward to the Lofoten Islands and Tromsø, weaving through fjords and fishing villages along the way. 

    If you prefer a quieter inland path, consider the train to Røros—a fairytale town nestled in the mountains, known for its rich food culture and vibrant handicraft traditions. With its timbered houses and cobbled streets, Røros offers a glimpse into Norway’s soul. From there, you can continue by train to Oslo and fly onward, carrying with you the memories of fjords, flavors, and friendships. 

    Wherever you go next, may the spirit of this journey stay with you—woven into your stories, your senses, and your sense of wonder.
